Need help with deep-frying my Thanksgiving turkey?

This is the first year that my hubby and I will be hosting Thanksgiving dinner. We will be deep-frying it. Does anyone have any tips or tricks, or things that we should NOT do when deep-frying the turkey? Also, we are planning on 11 adults and 2 children- how big of a bird do I need? Thanks so much!

I was also going to mention the Good Eats episode, they had it down to a science. They made an interesting point that UL will not approve any turkey fryer, they are all that risky. Keep kids and pets away and have a fire extinguisher on hand. Never lean over the hot oil as you lower the turkey in. On the show they made a hoist with a ladder.
